kale ginger green juice

I have been looking for ways to make more green juice and to replicate the same experience of juicing without actually buying a juicer. I think juicers are amazing, but I really want to avoid buying yet another appliance to sit on my counter.  My kitchen mantra is to keep things as basic as possible.  I try to have as many multi-functional devices as I can.  I own a nice blender,  it is not top of the line,  but it is middle of the road and it does the trick well for this recipe and many others.  What I like about making “juice” in a blender, you always have a choice on using the pulp and keeping the drink more like a smoothie or it can be strained for a clear juice.

I ended up getting an inspiration for this at our local Earth Fare. They sell Kale Lemonade with the same ingredients that are in my mix.  Earth Fare’s is pressed through a juicer and it is amazing, but this comes close too.

The process is no different than a smoothie, all ingredients go in a blender but instead of something creamy I am adding only filtered water.  Of course, if you already own a juicer, then you would just press all the ingredients through a juicer and omit the water.

One of my favorite things about this drink is that it is a toddler favorite. Apples give this enough sweetness for little ones, but it is packed in with all the goodness of ginger and kale.  I have to be honest though, my little one has had a strange obsession with ginger since his early days, so it may not be favorite for all toddlers.

You can customize this by adding more ginger for a spicier taste or even add in a cucumber for an added fresh and cooling flavor.

Easy and healthy green juice
Ingredients
  • 2 cups filtered water
  • 2 cups kale
  • 1 lemon, peeled
  • 2 apples, cored, peeled and cut into large chunks
  • 1-1/2 in fresh ginger root peeled
Instructions
  1. Add water, kale,apples lemon and ginger to a blender. Blend on medium for about 30 seconds then blend on highest speed for a minute.
  2. Strain through a fine mesh strainer or a nut bag and enjoy!
